As I understand it the FAT torpedo does not slow down during the turnes, they are running at 30 knots all the time. The 7 knots (in the 800 legs example) is the mean speed with which the zigzagging manoeuvre moves forward, look at this picture to see what I mean: [w1.510.telia.com]
I did some math and one get 7.08knots mean speed with 800legs and 180degress turns, but only 4.35 with 1600legs. Still I think that is what they mean.
