There is a patch available on subsim.com to correct the depths.

From that forum:

Absolute Maximum Crush Depths (no U-boat should ever, ever, EVER be able to go beyond these depths without being crushed):

Type IIA: 175 m
Type IID: 200 m
Type VIIB: 250 m
Type VIIC: 300 m
Type VIIC/41: 350 m
Type VIIC/42: 450 m
Type IX (all variants): 275 m
Type XXI: 350 m

Maximum Safe Depths (All undamaged U-boats must be able to reach these depths without being crushed):

Type IIA: 100 m
Type IID: 125 m
Type VIIB: 175 m
Type VIIC: 200 m
Type VIIC/41: 225 m
Type VIIC/42: 275 m
Type IX (all variants): 200 m
Type XXI: 250 m

Data assembled from u-boat.net and u-boatwar.net.
