Good morning to you.
A possible explanation may be in the Time Zones used by the U-boat and whatever other reporting vessels were using. The report on this site states that attacks were carried out between 0454 and 0505 on 03 November 1941
It is understood that U-Boats used a Standard Time, which would be 2 hours ahead of GMT.
For the Longitude in which the Gretavale was sunk the Zone Time used by the Convoy could have been 3 or perhaps 4 hours behind GMT. So there is a possible difference of 5 to 6 hours.
This difference would cause the sinking time to be close to Midnight on 02 November.
Good hunting
