MV Charlbury

I am looking for info on the British MV Charlbury. The crew claimed they were attacked by an Axis submarine on 28 May 1942, but the three subs in the area of the sinking, 305 east of Brazil, near Fernando de Noronha, claim no sinkings this day or even any in the area on other days. Just peaked my curiosity. Are all U-Boat sinkings listed? If a U-Boat sunk a ship it would surely claim it.
