It looks like you have accumulated quite a bit of information already. Nice job.
I checked a couple sources and struck out as well.
One more thing you might try is try posting on the ubootwaffe.net forum, specifically for Hubertus Weggelaar who is working on the crew list for that site.
Other than that, then yes, as per Ken's post on June, 28th, 2003 WASt and the Uboat archive would be your next move.
Remember, most men in the Kriegsmarine were not U-boat men, and it may very well be he was simply part of a anti-aircraft crew that protected the base. Nothing wrong with that. As far as being captured on land if he was a U-boat man, it actually wasn't that unusual. The bases were cut off and isolated after the invasion and any crew that didn't make it out formed infantry units. If I recall correctly, some even broke out trying to meet up with other German units. There have been a few posts on that topic over the years here.
