The cast members of "Lord of the Rings" who participated in fight scenes spent six months learning sword-fighting techniques, and generally getting into shape, before filming began. Those whose roles required equestrian prowess also spent time learning to ride and deal with horses, if they didn't already know how. All this preparation certainly adds to the verisimilitude of the end product, in all of the movies mentioned.
