Hi Tim,
I used a dark gray which matches the lower part of the hull and saddle tanks for my build of U-96 with the deck and metal plates on the bow and stern. Mr. Dougie Martindale has written an excellent article and it is available on the internet which extensively covers U-Boat colors.
