Handling characteristics

In conjunction with some of my students I am developing a model of the battle of the Atlantic. In order to make the duel between escort vessel and u-boat as realistic as possible I need some technical information other than speed surfaced and speed submerged, which is all you seem to get in technical specifications.

Specifically what was the minimum turning circle of a type VIIc ( or any other) boat and what was the maximaum rate of turn? Also what was the maximum rate of descent under control?

It seems that this information id difficult to find and if anyone has any ideas or pointers to sources I would be grateful.

Incidentally similar information for escort vessels is also hard to come by,,,any offers
