Firing Torpedoes

I am not a techie when it comes to subs but wouldn\'t the torpedoes acquire the targets by homing into the propellers\' noise. Or magnetic. In any case the torps would do a figure of 8 or some such pattern before detonating, right? If a convoy is sighted, is it still necessary for the fire control guys to acquire a target and launch the torpedoes? If the hydrophone operator can hear it, why not just launch the torp in the same bearing as the hydrophone picked up the sounds from. I am kinda confused how exactly torpedoes are handled.
