Hello RC,
The Book "Geschichte des deutsched U-Bootbaus" Band 1 by Eberhard Rossler has a Fold out plan Tafel III Uboottyp VII V - Eisenlangsschnitt. The plan list the thickness of the sheet metal as 11.5 mm for ths saddle tanks.
The pressure hull steel plate thickness from stern to the bow was in 8 sections...
16 mm - 17 mm - 17.5 mm - 18 mm - 18.5 mm - 18 mm - 17.5 mm - 16 mm
The Trumplatte (Tower) was 22 mm thick
