The UK National Archives should hold the information you seek. None is downloadable so it means a personal visit or ask/pay a researcher to do the work on your behalf. The staff there will do it for a fee. Here are the references which should contain much information:

ADM137/2961.(British merchant vessel sunk Jan-April 1917)
ADM137/1362. (Irish Sea; German submarines, 1917).
ADM137/942. (Auxiliary Patrol Weekly Reports 1917).

There is a chance there is something in ADM137/1311 (German Submarines, South West approaches) - depends on where the ship was attacked/sunk.

Depending on how much research you want to do, there is also:

BT99/3287 (Crew agreement for Pontiac, official number 81273, 1917).
BT110/387/11 (Transcript of Register - basically, a fairly detailed description of the ship)

Within these documents you are very likely to find an account of the attack and sinking, as well as other information. Further detail on the crew can be found
