It was MTB-715 that fired its two torpedoes at a northbound U-boat from a distance of 800 yards in the Hjeltefjord (60°42'N/04°46'E) at 0130Z on 6 April 1945. The attack was assessed by the U-boat Assessment Committee on 28 May 1945 as "U-boat present. No damage.", but no reason or source was given how they came to this conclusion.
The U-boat attacked must have been U-1055 which departed Bergen at 2200 (German time) on 5 April 1945, but was last heard from on 23 April en route to its operational area in the English Channel and went missing thereafter.
So the U-boat was not hit, but why were the crewmen of the Norwegian MTBs convinced to have sunk it? The attack happened in a dark night and the torpedoes used were Mark VIII** with non-contact C.C.R. pistols - it seems they detonated prematurely and the immediate crash diving of the U-boat to evade further attacks certainly left the impression that it sank.
