RE: insufficient elevation

U-boat deck guns could not be used against aircraft due to lack of elevation. Only machine guns and small arms could be used. Although there were not the a/c around in the Great War that there were in WW2 U-boats still tended to shy away from them and dirigibles. A great many times U-boats were able to surface and stop the ship to check her papers before allowing the crew to take to their boats then sinking the ship by gunfire.
Re your other queries, I think the others more knowledgable than I have answered before me. The Sunderlands did come to mind but all I know about a/c is that they fly.
