Hi
Dragonfly translates into German "Augenstecher" which literally translates into Eye piercer, or an insect stabbing at your eye. Probably from the common superstition caused by this insect's habit of hovering in front of your face. In my opinion this would have been a very nice emblem for a U-boat.
However, I have checked with Högels book, and didn't find any dragonflies. However I found a Bee, U 490/Gerlach, which never entered the Mediterranean.
I found U 221/Trojer which had a flying dragon from the city Emblem of Klagenfurt. This boat never entered the Mediterranean either.
At last I found U 371/Diver/Neumann/Weber/Mehl/Fenski. As you can see it had several commanders. It also had at least three emblems. On uboat.net pages you only find the donkey, but in Högel's book you additionally find two more emblems: The old city emblem of Mönchengladbach, (Münchengladbach), (which also contains a dragon), and lastly what I think is a Mosquito with a very mean-looking stinger. Could it be this one?
U 371 operated in the Mediterranean from the autumn of 1941 until it was sunk on May 4th 1944.
