There is a deleted scene where the U26 does indeed dive, Indy lashes himself to the periscope and narrowly avoids being eaten by sharks on the way to the Mediterannean island. Photos exist of Spielberg filming Ford for this scene and the comic book adaptation of the movie devotes an entire page to it! Hopefully when Lucasfilm eventually release the trilogy on Blu-Ray (rumoured for later this year or early next) we'll finally get to see some of the many deleted scened for all 3 films.
