In response to your question...I "believe" it was the AVONDALE PARK that was the last Canadian registered merchant ship to be lost in WWII.
The date listed is May 7, 1945.
Torpedoed by U-2336 at Type XXIII boat (commanded by Emil Klusmeier)1 mile SE of May, Firth of Forth, Scotland.
The AVONDALE PARK was completed in May, 1944 and was built in Pictou, Nova Scotia, Canada.
Some sources list AVONDALE PARK as a "British" registered ship (with a British crew) and not a "Canadian" registered ship at that particular date so there may be some uncertainty there...
If not the AVONDALE PARK then possibly the TABER which was presumed to be sunk by a mine on March 13, 1945.
Hope this is accurate and answers your question.
