If he was the guy I'm thinking of, which would be Gerhard Groth, yes, he did survive the war. He made commander, too, of the U-968. He died in 1997 in Mexico City.
The little Second Watch Officer, whom I've tentatively identified as Werner Herrmann, was training as commander of U-2510, a Type XXI, when the war ended.
The mini-series of Das Boot does give the IWO one sympathetic moment when he briefly speaks of his fiancee's death in an air raid.
