Well, the Diesels in the U995 engine room are of type F46 manufactured by Krupp-Germaniawerft.
In U505 you can see MAN M9V40/46 engines.
So these are two different constructions. For details you can look here:

Generally, what you think is a "cover", is a duct leading air from super-chargers to the cylinders. So the engines are not covered from the top. Below these ducts is access to the fuel pumps and valves. From the top you have access to the cylinder head. See the drawings on the u-historia.com
