After consulting Georg Högel\'s book, following boats had a penguin insigna:
U-224, OL Hans-Karl Kosbadt, sunk west of Algiers on 13 January 1943, 45 dead, one survivor. A penguin seen frontally (Högel 1996, 77)
U-389, KL Siegfried Heilmann, sunk with all hands souht west of Iceland on 04 October 1943. (Högel 1996, 99 and Uboat.net U-389 page). It shows a penguin stanfing on an ice floe his head under the olympic games rings.
U-3024, OL Ferdinand Blaich, scuttled 03.05.1945 near Neustadt. A walking penguin on a blue background (Högel 1996, 180).
My source is Högel, Georg (1996), Embleme, Wappen, Malings deutscher U-Boote 1939 - 1945, Koehler, Hamburg.
From this short list, you will notice that besides U-3024, scuttled without loss of life in 1945, U-229 was sunk with all hands but one officer, and U-389 sunk with all hands.
So it is my educated guess that you are looking after U-224. You can have more details on the career of U-224 in the member section of Uboat.net:
