I'd have to check my Directors Cut copy, but I thought it gave you the option of 16:9 or 4:3, and it was encoded with Dolby Digtal 5.1 sound. As long as you're receiver (or separates) and DVD handle optical or coaxial digital audio connections you should be all set.
There is a newer superbit version that is supposed to improve both sound and video and if you do a search on this forum you'll see some reviews.
At least here in the states you are limited to 480p by a progressive scan DVD player anyway, so I'm not sure if you would get the full benefit of a 720 or 1080 display until the new HDDVD format arrives.
A lot also depends on the rest of your system as well (receiver/amps, speakers, cables, etc...).
