Diving Plane(s) controlls

Hello Again Everyone,

Just curious...what was the purpose of the wheel \'around\' the hydroplane(s) controls - (1 for each fore and aft). The movie Das Boot seems to suggest they were manual overrides. Were they, and if so, exactly how did they link to the actual surfaces?
