How to find out more about this sinking

My wife's grandfather died as a Jewish refugee/prisoner while being transferred from the Isle of Man to Canada. Supposedly the ship he was on was hit by a Uboat. Is it possible to find out more about this incident- the name of the ship, and a possible record of his death?

And it's not exactly U-Boat related, but where also might I find out about the facility where he and his wife (who was not on the ship) were kept?

Any insight appreciated!
