You may want to check Michael Gannon\'s book Operational Drumbeat. This book is based on U-boat attacks off the eastern coast of the U.S. This would be a great place to start your research. Gannon explains the conditions of USN defences and of course U-boat operations. I do not know anything about the island but it might be possible to reach the docks on the surface at night. There is another book \"Torpedos in the Gulf\" that explains U-boat operations in the Gulf of Mexico. Check book reviews on the Uboat net. I believe you might find a book that is about U-boats in the Caribean. I forget the name of this book. Good Hunting.
