For type VIIC hull thickness you can find in the following report:
[uboatarchive.net] (page 37).
The thikness of outer shell for type IXC (I think there were no
significant differences in construction of outer shell between
type IX and type VII - compare pressure hulls) can be found here:

(section S11 - HULL STRUCTURAL, 3. Outer shell)

Type VIIC/41 had pressure hull plating 21 mm thick (comparing to
18,5 mm for type VIIC).
