Dear Adam,
As to German uboats that operated in the Caribbean, you might have a look through the pages of Gaylord T.M.Kelshall's book "The U-boat war in the Caribbean" (1994, Naval Institute Press, ISBN 1-55750-452-0).
I assume this book will reply most questions you have on the uboats involved.
Regret, I have no such reference to propose for British submarines.
