Some of your questions(1-2-3-4-6 and 7) could be answered by looking at the "Gallery" pics of U-995 and U-505.
9-The red and yellow colom is the "Papenberg" indicator.
It shows the periscope depth.(Can be seen in the movie "Das Boot). It works only in/at a specific depth. When the boat went deeper they used the "Tiefenmesser"(Also in "das Boot")
8-Red light was for adjusting the eyes of the watchdetail to darkness. Blue light was emergency light to spare the batteries.
As to the color of "diesel-oil". I do not think this has changed much since WWII.
