Choosing ONE is very difficult! I wanted to stick with 2, broke something on the kit that only a 3rd PE set would fix, then got the bug and bought more!
I also recommend the U-Brass vent set now available at WEM, not only does it cover accurate vents but gives you the torp doors and surrounds as "cheek" pieces (the kit doors are too long) plus turnbuckles for the rigging and other goodies. (I'm biased, I was involved in the project with a co-author).
Keep us posted on your choices and progress, it's a great kit, I'm still working on mine 1.5 years on!
