Convoy attack doctrine

Can anyone tell me the U-boat doctrine for attacking an escorted convoy during the second world war?
Was an attack made from directly ahead or would a U-boat creep up on a convoy from the rear? Was U-boat sonar a major guiding factor or would it be on sitings alone? How did it alter from daylight attacks to nightime attacks?
Would it be different for the Mediterranean than for the Atlantic?
Any replies would be most welcome, thanks.
