Both G7a (air) and G7e (electric) torpedoes had big-time problems with their warheads early in the war. And also depth-keeping.
I am not aware of any problems specific to the electric torpedoes, but I'm sure someone more knowledgable could correct me
Clay Blair's "Hitler's Uboat War" discusses it some, the problem particularly came to a head during the Norwegian campaign.
G7e's didn't get a reliable magnetic pistol until the Pi-2, which was introduced in 1943. The Pi-3 followed later for air torpedoes.

Unforutnatley, I don't know of any sites that discuss the operation of the pistol in detail.
