Torpedo tech basics

I really do not quite understand exactly how the torpedo is launched from the boat.
Yes, compressed air expells the misile with the aid of a piston? Where can I find a schematic of how this machinery works? How does this three thousand pound cylinder maintain a constant level as it travels toward it's target? The business ends of the submarine is something I must understand.
