Irish crewman on WW1 uboat.

I have just joined, so please excuse me for any mistakes in my request.
An ancestor, THOMAS MOORE, was born in Ireland in 1896. He was later apprenticed in the shipyard in Glasgow, before serving with the German Navy as an engineer on a U-boat. I do not know the number of the U-boat, I'm afraid.
I know this to be true because in 1963 I was shown by his sister, a long photograph of a U-boat. Thomas was standing at the extreme stern where his name was shown - "engineer". At the time I had little interest in asking for more information, and some time later his sister died, and the photograph and other papers were destroyed.
Were records of crewmen kept? Or was it just officers?
