Admiral Arthur (Reinhard) von Scheer was not Jewish. His father Julius was in fact a church minister in Obernkirchen (Lower Saxony). However, I am certain that there were many fine officers of Jewish origin in the Kriegsmarine during WWI, as there was in the Army.
As for the tale of Hitler's jumping into the bushes to avoid saluting a German Jewish officer, this is the first time I have heard this. Probably nonsense, though I would be interested in knowing what sources you gleaned this little nugget from.
