How does the U-boats fates get changed?

I am curious to know and have seen so many U-boats fates getting changed. How accurate are they? Why, I am asking is for years certain ships or planes were credited with sinking these U-boats and it seems for example Dr. Niestle has had many reversed and some even listed as missing. What makes his research accurate and previous research wrong? Just curious as to what he did that no ones else has t find these so called mistakes.
