A German historian named Jurge Rohwer has compiled a book listing all German, Italian, and Japanese submarine attacks, successful or not, during WWII.
In May 1945, according to him, there was only one sinking on the East coast of the United States attributed to a German U-boat. This was the U. S. collier (coal carrying ship) BLACK POINT. This vessel, traveling alone (not in convoy), from Norfolk, Virginia to Boston, Massachusetts, was torpedoed by the U-853 near Block Island (part of the state of Rhode Island) at 1740 on May 5, 1945.
In the various accounts of this incident, I find no mention of the CHR. T. BOE.
