Yours is a very specific question, so I´m afraid it´s going to be very difficult to find an answer to it.
Though I´m not in the German Navy I can tell you that probably the only way to know were that sextant came from is tracking its serial number.
My Navy(Argentina) uses this number to keep record of its sextants and to service them, usually at some shore workshop. If you can get to the German Navy´s web page may be they can help by giving you the address of the Navy department dealing with nautical instruments.
The other possible source of ideas is the Uboot Archive. Unfortunately they charge for researching, as this is a lonely man´s project, helped by several volunteers. But I´m not sure they will have the information you are specifically looking for.
