My German isn't exactly excellent, and neither is English my native language, but since nobody else has answered, I can give it a try.

The sentence ”Bei mittlerem Seegang gelang es uns mehrmals aus guter Position und kurzer bis mittlerer Entfernung Faecher zu schissen mit LUT Torpedos“ would translate into something like:
At medium Sea (state), and from a good position and short to middle distance, we several times succeeded in firing fan shots (multiples) of LUT torpedoes.

The sentence “Wenn wir mit Achterstich schossen, war der Lauf de Torpedos am Boot vorbei mit blossem Ohr zu hoeren“ would translate into something like this:
When firing the rear torpedoes, it was possible to hear with our naked ears when they ran by (passed by) the boat.
