Count not the dead: The popular image of the German Submarine by Michael Hadley. 1995
This book is a history of books writting about German submarines starting in WWI.
While Count not the dead is not the easiest book to read, if you are looking for titles and reviews of books about U-boats written mostly by Germans, this book may help you in your search.
Good luck with it.
