Dear Volker,
If you look close to your first mantionned depth-gauge you'll see the outlines of a periscope. This depth-gauge was used therefore to control depth when using the periscope. He, the captain, shouts out when atacking the destroyer "LI, tiefe halten!!" when the periscope tended to go under the waves and visibilety is obscured by the water. In the next shot you see the boat rising to 13 meters and stop. One sees the fluid in the depthgauge go up a bit and than stop. 13 meters was periscope depth.
The rest is like Dan explained.
