They could hear transients -- firing noises, doors opening and closing, etc. They could also hear the screws on the torpedo. They would probably hear these almost instantly, since sound travels much faster in water than in air. It would take longer to localise them, though. Very often longer than it took for the torpedo to get to the target. (The torpedo would be the easiest to find, since the sound of an outer door opening is quickly over.)
