The lower half of a screw runs in deeper water then the upper half of the screw, and therefore the lower half gets a better “grip” in the water. So you can think of a screw as a wheel standing on the seabed trying to drive the boat sidewise. With two screws turning in the opposite direction their side driving forces will cancelate each other.
