I do not know if this feature was present on any U-boats.
A number of French submarines from the WW1 era had just such a feature. If needed keys could be turned inside the submarine and part of the keel would drop away.
The Emeraude-class submarine Rubis, Q43, sank to the bottom and was made buoyant again, in part, by releasing these "security weights."
The US Confederate submarine Hunely had a detachable keel ballast.
