VIIC draught

The specifications show that a VIIC drew 4.7 meters or about 18 feet of water. I'm wondering how much of the boat is showing on the surface at that point. More specifically, if the boat wanted to cast off a landing party with a rubber digny in enemy territory, I guess it would want to show as little of itself as possible, so then how much water would it need to be in?
Likewise, charts are measured at mean low tide, so what is the minimum number of feet (on a chart) that a Captain would want to see?
Similarly, if a Captain could hear, but not see, the breakers, and the hull started to scrape bottom, would it make any sense to turn the boat parallel to the shore? Isn't it safer for the boat to be perpendicular to the waves and shore?
