Rob, I wish I had heard about this back when I was a high school science teacher.
The site you referred to also contains pictures of Bigfoot. Because Bigfoot would require a certain amount of food, it would have to travel a wide enough area that it would be spotted frequently. His relatives (he has to breed) would require an even larger area. The creature cannot possibly exist.
The site showed colorized versions of the famous Loch Ness monster picture. Decades after the picture was taken, the photographer's nephew admitted that they had hoaxed the picture with a toy boat and other material in order to get continued funding. If the Loch Ness monster ever did exist, they were large water creatures trapped in the Loch. If so, they eventually, they became extinct.
I'm afraid the "American Monsters" site is not reputable.
But it sure is a good story.
