On the page about U-2336 here on uboat.net one can read: "At 23.03 and 23.06 hours on 7 May 1945, U-2336 attacked the convoy EN-591 near May Island in the Firth of Forth and sank two ships, the Avondale Park and Sneland I."
and "This was the last attack carried out by an U-boat in World War II."

Then in John White's "Endgame" (ISBN 978 1 86227 485 3 I just read:
"These were the last ships to be sunk by U-boat in World War Two. Destroyers were heard approaching, and U 2336 edged her way at 1.5 knots into the shallower water inshore to avoid being detected. Some 30-40 depth charges were heard to explode and, in the shallow waters, some caused minor damage to the boat......"
