I have just watched that documentary.The entry in the guest book reads:
"Rüm hart - klar Kimming" which is Friesian dialect for "Firm heart, clear horizon", which is also a motto used by all Friesians. The standard German would be more like: "festes Herz - klarer Horizont". There's nothing about "heart of gold"("Herz aus Gold").
