I little bit late to continue the conversation maybe, but I just saw Das Boot - the director's cut, DVD. I found it really good. Wolfgang Petersen is a good war film maker because he shows not only spectacular action but the war reality, that is - no need to say - horrible. Homesickness and cruelty. As when the commander decides to let die the survivors of the tanker, because he cannot do elsewhere. So, I appreciated very much the portrait of the crew's life, their inner feelings, their fears, their hopes, their homesickness.
Yes, the movie is slow, bitter and in german language: but this was the reality. I agree with Io and James: it is a great movie.
