The "U-Boat Commander's Handbook" seems to indicate that the standard method was to use the stadia markings in the periscope (the graduated horizontal tick marks on the vertical line) and a little trigonometry. The stadia marks indicated the angle from the horizontal of the masthead tip, so if you knew how high that was, you could calculate the distance at which it would intersect that angle. The stadimeter did the same thing, but handled the calculations mechanically.
