U 668's KTB (War Diary) does exists. I have a copy of it on microfilm and have just checked it for engagements with aircraft on the date in question.
There is no question in my mind that U 668 is the boat attacked by Sunderland V/330 on 16 May 1944. The boat reposts crash-diving at 1715 (1515Z) when approached by a Sunderland in grid AF 8115 (6327N 0327E) that attacked with gunfire and bombs, apparently not inflicting but very minor damage.
U 668 was not attacked again, so it is definately not the boat attacked by Catalina C/333 later that same day.
A reconstructed ORBs does apparently not exist for U 240, but I understand information on its movements is to be found in the war diary of FdU Norwegen 27 March 1944 to 21 May 1944.
