Torpedo tubes, firing depth, XXI's

Howdy all.
One book I've got, "U-boats: Illustrated History of the Raiders of the Deep" by David Miller, mentions the torpedo tubes on U-boats as using pneumatic pistons, and being depth limited.
This max firing depth is mentioned as being 25-30m in this interrogation report:

However, I've seen casual reference of the XXI submarines being capable of firing torpedoes at up to 100m depth.
I know that the reloading mechanisms were significantly different on the XXI, but what about the launcing mechanism? Does anyone have any pointers to good reference on the subject?
