There's one slight problem with this story: location. As in real estate, location is everything in hunting down lost U-boats. The west coast of Mexico is a long way from Germany and I am not aware of any u-boats operating in that area. (Gulf of Mexico yes, on a limited basis, same with the South Atlantic and Indian Oceans).
The number of U-boats that simply disppeared is actually over 50 (see the fate part of this web site). Of course, any number of attributions could also be in error. (Certainly some are wrong, the question is just which ones). That said, most of these boats are Type VII, which would have only enough range without refueling at sea to operate off the Northeast USA. Any boat operating in the area you described would have to some from the fleet of Type IX and other larger/longer range boats.
